Christmas Jam Cookies


1 Cup Raw Almonds
1 Cup Rolled Oats
1 1/4 Cup Spelt Flour
1 t. Cinnamon
½ Cup Maple Syrup
½ Cup Oil (Sunflower, Almond, etc.)
½ Cup Fruit Sweetened Jam

Preheat oven to 350 degrees. Grind almonds to a meal in Vita Mix. Put ground almonds into mixing bowl.

Grind oats in Vita Mix. Add to ground almonds.

Add flour and cinnamon. Mix well.

Combine syrup and oil. Add to dry ingredients. Mix well.

Cover cookie sheet with parchment paper.

Form balls with dough (about 1 to 1 1/2 inches in diameter). Place dough balls on paper. Press an indention in the center of each cookie. Fill with jam. Bake for 10 to 15 minutes.
