Fill a 10 quart pot ¾ full with water. Bring to a boil. Chop all vegetables in chunks. Add everything to the pot and simmer 2 ½ hours covered. Strain out veggies when done and discard. You can compost discarded veggies or feed them to your animals. Strained veggies can also be used in some recipes, like vegetable patties mixed with grains, by squeezing the remaining liquid out of them. Store broth in the refrigerator for up to a week or freeze for up to a month.
